Clairet

In England, “clairet” or “claret” is red wine from Bordeaux grapes. The word comes from Spain. “Vino clarete” was a pale red wine – there were apparently no dark red wines until the 18th century. The name stayed but the colour of the wine changed. Our Clairet is a blend of Merlot, Cabernet Franc and Cabernet Sauvignon. When the grapes are still green, we halve them in number, so that only the very best remain on the vine. That’s how we can keep the peperoni aroma of the Cabernet under control. The Clairet is matured for 18 months in thin-sided casks (barriques). An aroma of compôte and black fruits is here combined with spicy notes and sometimes just a hint of peperoni.

We recommend not opening our CT for at least two or three years after bottling. That’s how long it takes to develop its full flavour. We believe that it does not reach its best for five to seven years.
